Gary Oliver's professional career began with Hearts in the Premiership in Scotland in July 2013, where he made a series of appearances over three seasons - eight in 2013-2014, nine in 2014-2015, and one in 2015-2016. During this time, Oliver also went on loan to Stenhousemuir in the League One in Scotland, where he made 11 appearances and netted two goals.
In September 2015, Oliver transferred from Hearts to Queen of the South in League One for an undisclosed fee. Here, he made an impressive 28 first team appearances and scored six goals. His performance caught the attention of Greenock Morton in the Championship, to which he transferred in July 2016.
